Pears are a very versatile fruit.As well as being delicious by themselves,they are used in fruit salad,can be poached or baked, and cooked in tarts,puddings and crumbles.they vary in texture shape and colour.beurre Bose is an elongated pear with greenish-brown skin an juicy flesh. It cooks very well for long lengths of time corella is a smaller pear with a green skin streaked with red. It si equally delicious when hard or soft. cornice has a yellow skin with a red blush. It is sweet and juicy texture. Most varieties are round like apples,with a yellow skin.
Coming from a family of chefs she broke the mold by choosing to be a pastry chef which differed from her parents and siblings who were all Chinese, Thai and European cuisine specialists. For her being a chef is not only an occupation it’s also her passion. She loves to create new healthy variations of desserts which are normally high in calories and sugar for those that enjoy a healthy lifestyle and can’t let go of their sweet tooth.

Ricotta cheese
Ricotta literally means recooked This reflects its method of manufacture in which whey and skim cows milk are heated thus causing the albumin or protein to collect in flakes, a process known as flocculating. As it is made from whey,ricotta is not strictly a cheese, but a by-product of cheese making.Ricotta is relatively low in fat,with a sweetish edge due to the presence of lactose or milk sugar. It is high in calcium and makes a good alternative to cream cheese.
Ricotta can be whipped,eaten fresh or cooked in baked goods. It is also available in lower fat varieties. If ricotta seems a little wet, drain overnight in a muslin-lined sieve.Ricotta is traditionally used in Italian cooking,especially cassata and chees cake
