Ricotta literally means recooked This reflects its method of manufacture in which whey and skim cows milk are heated thus causing the albumin or protein to collect in flakes, a process known as flocculating. As it is made from whey,ricotta is not strictly a cheese, but a by-product of cheese making.Ricotta is relatively low in fat,with a sweetish edge due to the presence of lactose or milk sugar. It is high in calcium and makes a good alternative to cream cheese.
