Ricotta cheese

Ricotta literally means recooked This reflects its method of manufacture in which whey and skim cows milk are heated thus causing the albumin or protein to collect in flakes, a process known as flocculating. As it is made from whey,ricotta is not strictly a cheese, but a by-product of cheese making.Ricotta is relatively low in fat,with a sweetish edge due to the presence of lactose or milk sugar. It is high in calcium and makes a good alternative to cream cheese.
Ricotta can be whipped,eaten fresh or cooked in baked goods. It is also available in lower fat varieties. If ricotta seems a little wet, drain overnight in a muslin-lined sieve.Ricotta is traditionally used in Italian cooking,especially cassata and chees cake
