Xanthan gum ไม่มีคุณสมบัติเป็น gelling agent แต่สามารถเกิด elastic themoreversible gel ได้เมื่อรวมกับ Locust bean gum และเมื่อรวมกับ Guar gum จะให้สารละลายที่มีความหนืดสูง
